Yummy Turkey Chili Recipe

I originally got this recipe off of Jennifer's blog a long time ago. But, I make it the way I like it. It is soooooooooooooo good & its' healthy! Since the weather is starting to cool off, I thought I would share this recipe. It is delish!

Me cookin' in the kitchen!
(how I make it)

1 T Olive Oil
1 large clove garlic, smashed
1/2 c. chopped scallions
1/2 pound ground turkey
2 T chili powder (use 3 or 4 if you want it spicier)
1 can (28 oz) crushed tomatoes
1 can (28 oz) diced tomatoes
1 can (15 oz) kidney beans, rinsed & drained
1 can (15 oz) pinto beans, rinsed & drained
1 medium red bell pepper
1/2 T brown sugar
salt to taste
Add a little Red Pepper flakes for tastes (sometimes I do this, sometimes I don't)

In large saucepan heat oil over med-high heat until hot but not smoking. Toss in garlic and scallions and cook, stirring frequently for 1 minute.

Add turkey & continue to cook, breaking up meat with spoon, until browned, about 2-3 minutes.
Stir in chili powder & cook for one more minute. Add tomatoes, kidney beans, pinto beans, bell pepper, brown sugar & salt for taste. This is also when you would add a few sprinkles of red pepper flakes. Bring to a boil over high heat.
Reduce to low, cover & simmer 15 minutes. Divide among 4 bowls & garnish with remaining scallions. Top with sour cream & cheddar cheese if desired.

YUMMY!

  1. I made this recipe yesterday! Got it out of Shape magazine years ago...it's a winter staple in our house! And I always add extra chili powder and some red pepper flakes too....great minds think alike!
